Spicy Pork and Eggplant Recipe
2 pcs large eggplants, cut into 2-inch length and halved 1/4 kg ground pork 1 pc chili, chopped 3 cloves garlic, minced 1 medium onion, minced 1 tbsp flour, dissolved in 1/4 cup water 2 tbsps soy sauce 2 tbsps oyster sauce salt and pepper to taste
1. Heat oil in a pan over medium heat. Fry eggplant until soft and browned both sides. Remove from pan then set aside. 2. On the same pan, add garlic, chili, and onion. Sauté until onion becomes translucent. 3. Add ground pork and cook until browned. Add soy sauce, oyster sauce, and water. Simmer for 10 minutes or until sauce thickens. Add back the eggplants and cook for 3 minutes. 4. Season with salt and pepper according to taste. 5. Serve with steamed rice. Enjoy your spicy pork and eggplant!
